Quick Chicken Chili

 

Serve with a garden salad and cornbread for a tasty meal.

Ingredients:

  • One pound of diced chicken

  • One 15 ounce can of kidney beans, drained

  • One 15 ounce can of pinto beans, drained

  • One 28 ounce can of diced tomatoes

  • One-half cup of chopped onion

  • Chili powder to taste (start with 1/2 tablespoon and make it as spice as you like!)

Directions:

 

  • Mix all ingredients in a sauce pan.

  • Heat to boiling.

  • Sir occasionally.

  • Reduce heat and simmer uncovered for 15 - 20 minutes, unitl chicken is thoroughly cooked through.

  • Makes 5 - 6 servings.

Serving Suggestions: Serve with a bowl of grated cheese for sprinkling on top.
