Serve
with a garden salad and cornbread for a tasty meal.
Ingredients:
- One pound
of diced chicken
- One 15 ounce
can of kidney beans, drained
- One 15 ounce
can of pinto beans, drained
- One 28 ounce
can of diced tomatoes
- One-half
cup of chopped onion
- Chili powder
to taste (start with 1/2 tablespoon and make it as spice
as you like!)

Directions:
- Mix all
ingredients in a sauce pan.
- Heat to
boiling.
- Sir occasionally.
- Reduce
heat and simmer uncovered for 15 - 20 minutes, unitl
chicken is thoroughly cooked through.
- Makes 5
- 6 servings.
Serving
Suggestions:
Serve with a bowl of grated cheese for sprinkling on top.
