We do use carrots and substitute jicama root for the potatoes, you can’t tell the difference! I made this yesterday for my family get together and it was delicious! I did make a few modifications. I had no fresh herbs so just used dried thyme (husband doesn’t like rosemary. Cooked 2 roasts together because we had several mouths to feed. I also isn’t add potatoes because we like mashed potatoes with the gravy. After cooking the roasts about 8 hours, I removed the meat and carrots and strained the broth, removed the grease from broth and thickened it with a cornstarch slurry in a clean pot on the stovetop. Then added the meat (after removing all the fatty pieces) and carrots to the thickened sauce. Everyone loved it! This is pure comfort food at its best! I didn’t have to add any additional seasonings as it was perfect as is. Yum!

They should have been put in the bottom of the cooker, not on top around the roast.
