This was sooo good! Reheats well. I doubled the recipe and am so glad I did! Entire family had seconds! Easy technique wise- w/a doubled recipe I had to cook the chicken in batches, so I put them on a cooling rack that was in a shallow pan into a 200deg F oven to keep warm. I also pulled them out of frying pan at about 155 so they could finish in the oven and not dry out while I made the sauce. Served over fettucine and “chef’s kiss”. will keep this in regular rotation!

This was delicious! Next time I think I’ll just buy cutlets as I didn’t pound my chicken thin enough so it took longer to cook. BUT the flavor was incredible!! I made some penne pasta to accompany this. I’ll absolutely make this again!

Made this Friday night…carefully followed the recipe. It was terrific! This is a company dish, for sure. It will be easier to make, the next time. The breasts I used were so large that I sliced them and made scallops. This worked very nicely. We are having the leftovers tonight…Yippee!!!
