Peanut Butter and Strawberry Jam Muffins

Ingredients:

  • 2 cups of flour

  • 1/2 cup of sugar

  • 1 tablespoon of baking powder*

  • 1/8 teaspoon of salt

  • 1/2 cup of peanut butter

  • 1/3 cup of unsweetened strawberry jam

  • 1 cup of milk

  • 1 egg

  • 2 tablespoons of melted butter

Make this recipe even healthier for your kids by using all organic ingredients!

Directions

1. Preheat oven to 350 degree Fahrenheit.

2. Whisk together peanut butter, egg, melted butter and milk.

3. Stir in the dry ingredients.

4. Lightly grease or oil the muffin tins and fill half of the tins with batter.

5. Add a layer of the strawberry jam over each muffin.

6. Top off each muffin with the remaining jelly.

7. Bake for around 20 minutes until lightly browned.

Peanut butter and strawberry muffins make a great after school snack. This is an easy recipe that kids can help prepare and bake.

For variations, try using different types of jams.

 

* Choose aluminum free baking powder, available to health food stores or in the natural health food section of many supermarkets.
