medium sized potatoes
- 2
eggs
- 2
teaspoons flour
- 2
tablespoons vegetable oil

Directions
- Peel
and grate the potatoes. Squeeze out moisture.
- Beat
the eggs with a wire whisk.
- In
a mixing bowl combine grated potatoes with eggs and
flour.
- Heat
oil in a skillet. Add potato mixture, using about
one tablespoon for each pancake.
- Fry
pancakes in frying pan on both sides until golden
brown.
