Potato Pancakes

 

Ingredients

  • 2 medium sized potatoes

  • 2 eggs

  • 2 teaspoons flour

  • 2 tablespoons vegetable oil

Directions

  • Peel and grate the potatoes. Squeeze out moisture.

  • Beat the eggs with a wire whisk.

  • In a mixing bowl combine grated potatoes with eggs and flour.

  • Heat oil in a skillet. Add potato mixture, using about one tablespoon for each pancake.

  • Fry pancakes in frying pan on both sides until golden brown.
